Ingredients
- 4 eggs
- 150 g smoked pork, diced
- 3 potatoes, previously boiled and then diced
- 1 yellow onion, diced
- 4 tbsp water
- 2 tbsp parsley, finely chopped
- Salt and pepper
- Lettuce and tomatoes
Method
- Fry the pork crisp in a pan on medium heat.
- Add the onion and potatoes and fry for a few minutes.
- Lightly beat the eggs and water with a fork, then season with salt and pepper.
- Pour the batter in the pan, then reduce the heat to intermediate.
- Stir with a fork in the solidified batter, so that all loose batter reaches the bottom of the pan.
- After a couple of minutes place the pan in the oven and bake until the top is golden brown.
- Grind over extra pepper, sprinkle with parsley and serve with lettuce and tomatoes.
