FARMER´S OMELETT

Ingredients
  • 4 eggs
  • 150 g smoked pork, diced
  • 3 potatoes, previously boiled and then diced
  • 1 yellow onion, diced
  • 4 tbsp water
  • 2 tbsp parsley, finely chopped
  • Salt and pepper
  • Lettuce and tomatoes

Method
  1. Fry the pork crisp in a pan on medium heat.
  2. Add the onion and potatoes and fry for a few minutes.
  3. Lightly beat the eggs and water with a fork, then season with salt and pepper.
  4. Pour the batter in the pan, then reduce the heat to intermediate.
  5. Stir with a fork in the solidified batter, so that all loose batter reaches the bottom of the pan.
  6. After a couple of minutes place the pan in the oven and bake until the top is golden brown.
  7. Grind over extra pepper, sprinkle with parsley and serve with lettuce and tomatoes.
