RIBS IN THE OVEN WITH POTATOES - PORTUGUESE STYLE


Serves 6
50 minutes + overnight marinate

Ingredients
  • 1,300 kgs of ribs, cut into smaller pieces
  • 5 garlic cloves
  • 1 bay leaf, without stem
  • 6 peppercorns
  • 1 tbsp red pepper paste or paprika
  • 2 dl white wine
  • 2 tbsp olive oil
  • 1 tbsp lard, melted
  • 800 g small potatoes, peeled and quartered
  • Salt, pepper and paprika
 
Method
  1. Grind the garlic cloves, bay leaf, peppercorns, pepper paste or paprika and salt with a mortar and pestle to a paste.
  2. Put the ribs in a glass bowl or plastic bag, then rub the paste into the meat. 
  3. Cover the bowl with plastic wrap and let marinate in the refrigerator overnight.
  4. Preheat the oven to 180 - 200 °C.
  5. Put the potatoes in an ovenproof dish, then season with salt, pepper and paprika.
  6. Place the ribs on top of the potatoes and sprinkle with the lard, olive oil and wine and bake in the oven for about 45 minutes or until the ribs are golden brown.
