Skånsk potatis |

Ingredients
- Smoked ham, 1/2 cm thick
- 4 eggs
- 2 tbsp butter
- 800 g potatoes, peeled and diced
- 1 onion, finely chopped
- 3,5 cups milk
- 2 tbsp Maizena (corn starch)
- 1 tsp soy sauce
- Salt and pepper
- Ketchup and mustard, to serve
Method
- Heat the butter in a frying pan and sauté the potatoes for about 5 minutes over a medium heat. Stir occasionally so the potatoes don´t burn.
- Add the onion and sauté for a few more minutes.
- Season with salt and pepper, then pour in the milk. Leave a little to mix with the Maizena.
- Cover the pan and simmer the potatoes for about 15 minutes, until they are soft. Stir now and then so they don´t burn.
- When the potatoes are almost cooked add the Maizena mixed with the remaining milk and cook for a few more minutes until the sauce has thickened, then add the soy sauce.
- Meanwhile, fry the eggs in one pan and the smoked ham in another with little or no fat.
- Serve with mustard and ketchup.
Tip: If you can´t find or don´t like smoked ham serve the potatoes with sausages for example.
