SWEDISH CREAMED POTATOES FROM SKÅNE WITH SMOKED HAM


Skånsk potatis

Serves 4

Ingredients
  • Smoked ham, 1/2 cm thick
  • 4 eggs
  • 2 tbsp butter
  • 800 g potatoes, peeled and diced
  • 1 onion, finely chopped
  • 3,5 cups milk
  • 2 tbsp Maizena (corn starch)
  • 1 tsp soy sauce
  • Salt and pepper
  • Ketchup and mustard, to serve

Method
  1. Heat the butter in a frying pan and sauté the potatoes for about 5 minutes over a medium heat. Stir occasionally so the potatoes don´t burn.
  2. Add the onion and sauté for a few more minutes.
  3. Season with salt and pepper, then pour in the milk. Leave a little to mix with the Maizena.
  4. Cover the pan and simmer the potatoes for about 15 minutes, until they are soft. Stir now and then so they don´t burn.
  5. When the potatoes are almost cooked add the Maizena mixed with the remaining milk and cook for a few more minutes until the sauce has thickened, then add the soy sauce.
  6. Meanwhile, fry the eggs in one pan and the smoked ham in another with little or no fat.
  7. Serve with mustard and ketchup.

Tip: If you can´t find or don´t like smoked ham serve the potatoes with sausages for example.
