GREEK SALAD WRAPS



Serves 2

Ingredients
  • 1 large tomato, roughly chopped
  • 50 cm piece of cucumber, cut into sticks
  • 6 kalamata olives, split and stoned
  • 2 very large soft tortilla wraps
  • 50 g feta cheese, cut into sticks
  • 2 tbsp houmous

Method
  1. Warm a pan to a medium heat, then quickly toss in your tortillas one at a time. You don't need to have any oil on the pan.
  2. Make a row of tomato, cucumber, feta and olives down the centre of each warm tortilla.
  3. Spread the houmous around the top and sides of the tortilla.
  4. Fold in the sides to seal in the ingredients and roll up tightly to make a big cigar.
  5. Cut in half and eat with your fingers.
