Ingredients
- 1 kg steak, cut into 4 cm pieces
- Wheat flour, seasoned with salt and pepper
- Olive oil, for frying
- 4 garlic cloves, finely chopped
- 500 ml beef stock
- 375 ml beer
- 2 yellow onions, chopped
- 3 bay leaves
- 55 g stuffed or pitted green olives, sliced
Method
- Turn the meat lightly in the flour.
- Heat the olive oil in a large frying pan, add the garlic and brown the meat over high heat.
- Add the broth, beer, onion and bay leaves, season with salt and pepper and bring to a boil.
- Lower the heat, then simmer gently covered for 2,5 hours. Stir a few times during this period.
- Remove the lid and simmer for another 30 minutes.
- Stir, then stir in the olives. Season with salt and pepper if needed.
- Serve with rice or mashed potatoes.
