SPICY SHRIMP STEW


Serves 4


Ingredients
  • 1 yellow onion, sliced
  • 1 bunch scallions, sliced
  • 1 garlic clove, finely chopped
  • 2,5 cm ginger, finely chopped
  • 1-2 red chillies, finely chopped
  • 4 tbsp olive oil
  • 1 tsp turmeric  
  • 1 tsp cumin
  • 1,5 tsp red curry paste
  • 1 can chopped tomatoes
  • 1,5 dl water
  • 1,5 dl cream
  • 1 bunch fresh coriander or parsley, chopped
  • 500 g shrimps, peeled
  • Cooked rice, to serve
Method
  1. Heat the olive oil in a frying pan and fry the onion, scallions, garlic, ginger and chillies on a low heat for a few minutes.
  2. Add the spices and curry paste and stir for a minute.
  3. Stir in the tomatoes and water and bring to boil, then reduce the heat and simmer for 10 minutes.
  4. Stir in the cream and the cilantro and simmer for another 5 minutes.
  5. Stir in the the shrimps, then season with salt and pepper.
  6. Garnish with chopped cilantro and serve with the rice.
