Serves 4
Ingredients
- 1 yellow onion, sliced
- 1 bunch scallions, sliced
- 1 garlic clove, finely chopped
- 2,5 cm ginger, finely chopped
- 1-2 red chillies, finely chopped
- 4 tbsp olive oil
- 1 tsp turmeric
- 1 tsp cumin
- 1,5 tsp red curry paste
- 1 can chopped tomatoes
- 1,5 dl water
- 1,5 dl cream
- 1 bunch fresh coriander or parsley, chopped
- 500 g shrimps, peeled
- Cooked rice, to serve
- Heat the olive oil in a frying pan and fry the onion, scallions, garlic, ginger and chillies on a low heat for a few minutes.
- Add the spices and curry paste and stir for a minute.
- Stir in the tomatoes and water and bring to boil, then reduce the heat and simmer for 10 minutes.
- Stir in the cream and the cilantro and simmer for another 5 minutes.
- Stir in the the shrimps, then season with salt and pepper.
- Garnish with chopped cilantro and serve with the rice.
