LAMB FILLET WITH POTATO & FENNEL GRATIN


Serves 2
60 minutes

 
Ingredients
  • 2 lamb fillets, about 300g
  • Salt, pepper and thyme
  • 1 teaspoons butter + 1 teaspoon olive oil
  • 200 g of potato, sliced
  • 100 g fennel, sliced
  • 1/2 red onion, sliced
  • 1 dl cream
  • 1/2 tablespoons veal glace
  • 1/2 clove garlic, grated
  • Green beans, boiled

Method
  1. Preheat the oven to 225 °C.
  2. Butter the bottom and sides of a baking pan with the butter.
  3. Layer the pan with the potatoes, fennel and onions in the dish, seasoning with salt and pepper in between.
  4. Mix the cream with the glace and the garlic and pour over the mixture.
  5. Bake in the oven for approx. 45 minutes.
  6. Meanwhile, season the meat and cook it in a skillet with the olive oil until it´s done to your liking.
  7. Serve it with the gratin and the green beans.
