WHITE BEAN DIP


Serves 2


Ingredients
  • 1 can large white beans (410 g)
  • 1 garlic clove garlic, crushed
  • 1 cup water + 1/4 vegetable stock cube
  • Salt and pepper

Method
  1. Strain the beans and pour them into a saucepan.
  2. Add the garlic, water and stock cube and cook for 5-10 minutes.
  3. Blend to a smooth dip, then season with salt and pepper.
  4. Serve with e.g. grilled vegetables (I used zucchini, aubergine and red bell peppers).
