GARAM MASALA POWDER


Garam masala (from Hindi: garam ("hot") and masala ("mixture")) is a blend of ground spices common in North India and other South Asian cuisines. The composition of garam masala differs regionally, with wide variety across India. Varying combinations of these and other spices are used in different garam masala recipes in accordance to region and personal taste, and none is considered more authentic than another.

Ingredients
  • 4 dried bay leaves
  • 7 black cardamom pods, seeds only
  • 1 tsp whole black peppercorns
  • 2 tsp cumin seeds
  • 1 tsp ground cinnamon
  • 5 whole cloves
 
Method
  1. Grind the dried bay leaves, cardamom seeds, peppercorns, cumin seed, ground cinnamon and whole cloves together to a fine powder using a spice grinder or mortar and pestle.
  2. Store the mixture in a vacuum-sealed jar in a cool, dark place. It will keep for several months.
