MASALA CHAI


Masala chai (literally "mixed-spice tea") is a beverage from the Indian subcontinent made by brewing tea with a mixture of aromatic Indian spices and herbs.

Serves 6

Ingredients
  • 1 liter water
  • 3 cm fresh ginger, grated
  • 1-2 cinnamon sticks
  • 8 cardamom seeds
  • 8 black peppercorns
  • 4 cloves
  • 1 tbsp black tea (or 3 tea bags)
  • 2 tbsp raw cane sugar
  • 3 dl milk
  • Raw cane sugar, to taste

Method
  1. Boil all the spices in the water in a pan for 5 minutes.
  2. Remove the pan from the heat.
  3. Add the tea and sugar and let steep for 3 minutes, then train it into teacups.
  4. In another pan heat the milk while continuously whisking, until the desired amount of froth is obtained.
  5. Remove the pan from the heat, then tap it on a hard surfrace to remove the biggest bubbles.
  6. Pour the frothed milk into the teacups and serve immediately.
  7. Add some more sugare if you like your tea sweeter.
