PYTT I PANNA


Pyttipanna, also pytt i panna, pyttipanne (Norwegian), pyttipannu (Finnish), is a hodgepodge of food similar to bubble and squeak. The term is Swedish/Norwegian for "small pieces in pan". The dish was originally made from leftovers of past meals but is now far more common prepared from prime ingredients. Frozen pyttipanna of many varieties can be bought in almost every Swedish, Norwegian or Finnish supermarket. Pyttipanna is often abbreviated to pytt and occasionally called 'hänt i veckan' ('happened this past week') reflecting its origin as a dish made with leftovers.

Ingredients
  • 2 onions, finely chopped
  • 6-8 boiled, peeled potatoes, finely diced
  • 300 g cooked or fried beef or pork, finely diced 
  • 200 g of sausage such as falukorv, finely diced
  • 3 tbsp butter
  • Salt and pepper
  • Fried eggs and pickled beetroots, for serving

 
Method
  1. Sauté the onions, potatoes, meat and sausage in butter in a skillet.
  2. Season with salt and pepper and serve with fried eggs and pickled beetroots.
