Ingredients
- 8 chicken fillets, about 600 g
- 2 tbsp Maizena
- 2 tbsp butter
- Salt and pepper, to season
- 1 dl white wine
- 1 dl apple cider
- 1/2 tbsp concentrated chicken glace
- 2 large yellow onions, cut into wedges
- 4 garlic cloves, peeled
- 2 sourish apples, e.g. Granny Smith, cut into cubes
- 1 tsp dried rosmary
- Cooked rice and green beans, to serve
Method
- Pat the chicken breasts dry with kitchen paper, then dip in the Maizena, shaking off any excess.
- Heat a large casserole for a couple of minutes over a moderately high heat, then add the butter.
- Place the chicken fillets in the pan, skin-side down and fry until the skin is nicely browned, then turn the fillets over and fry the other side until brown.
- Afters seasoning with salt and peppar, add the wine, cider and glace and then the apples, onions, garlic and rosemary.
- Turn the heat down, place the lid and simmer for about 30 minutes.
- Check the seasoning, adding extra salt and pepper to taste and serve with rice and green beans.
