APPLE CIDER CHICKEN CASSEROLE


Serves 4

Ingredients
  • 8 chicken fillets, about 600 g
  • 2 tbsp Maizena
  • 2 tbsp butter
  • Salt and pepper, to season 
  • 1 dl white wine
  • 1 dl apple cider
  • 1/2 tbsp concentrated chicken glace
  • 2 large yellow onions, cut into wedges
  • 4 garlic cloves, peeled
  • 2 sourish apples, e.g. Granny Smith, cut into cubes
  • 1 tsp dried rosmary
  • Cooked rice and green beans, to serve

Method
  1. Pat the chicken breasts dry with kitchen paper, then dip in the Maizena, shaking off any excess.
  2. Heat a large casserole for a couple of minutes over a moderately high heat, then add the butter.
  3. Place the chicken fillets in the pan, skin-side down and fry until the skin is nicely browned, then turn the fillets over and fry the other side until brown.
  4. Afters seasoning with salt and peppar, add the wine, cider and glace and then the apples, onions, garlic and rosemary.
  5. Turn the heat down, place the lid and simmer for about 30 minutes.
  6. Check the seasoning, adding extra salt and pepper to taste and serve with rice and green beans.
