GROUND BEEF BRUSCHETTA


Bruschetta is an antipasto from Italy whose origin dates to at least the 15th century and is usually served as a snack or appetizer. It is often prepared using a brustolina grill. The toppings depend on the region. In Tuscany e.g. it is called fettunta and it is usually served without toppings, especially in November, to taste the very first oil of the season.

Ingredients
  • 400 g of minced beef 
  • 2 tbsp olive oil
  • 1 chicken stock cube
  • 2 dl water
  • 1/2 red onion, chopped 
  • 3 tomatoes, chopped 
  • 1/2 pot parsley, chopped 
  • 2 pinches of salt
  • 1 pinch of freshly ground black pepper
  • 4 slices of bread

Method
  1. Fry the previously seasoned minced meat with 1 tbsp of olive oil.
  2. Crumble the stock cube into the minced meat, then add the water and cook for 5 minutes.
  3. Mix the onion, tomatoes and parsley in a bowl, season with salt and pepper, then mix in the remaining olive oil.
  4. Grill or toast the bread, then top them with the ground meat and the tomato salsa.
