GRANDMA´S CHOCOLATE MOUSSE


Serves 6

Ingredients
  • 6 eggs
  • 4 tbsp sugar
  • 200 g dark chocolate
  • 1 tbsp butter
  • Walnuts, chopped, for garnish

Method
  1. Break the chocolate into pieces and put in a bowl over, but not touching, a pan of simmering water.
  2. When the chocolate begins to melt, turn the heat off and set aside.
  3. Separate the eggs in 2 different bowl.
  4. Whisk the egg yolks with the sugar for 7-10 minutes, then mix it well into the somewhat cooled chocolate.
  5. Whisk the egg whites into soft peaks, then fold them very gently into the mixture until just combined. Don't overmix at this stage as you'll knock out the air bubbles and the mousse will be dense.
  6. Put the mixture into one big or 6 small bowls and refrigerate for at least 3 hours until set.
  7. Garnish with the chopped walnuts.
