PORTUGUESE RICE

Arroz à Portuguesa

Serves 4


Ingredients
  • 180 g rice
  • 20 cubes of meat (pork or beef), seasoned to taste 
  • 16 slices of Portuguese chorizo
  • 1-2 dl peas
  • 2 carrot, thickly sliced
  • 1 green bell pepper, thickly diced
  • 2 onions, chopped
  • 2 ripe tomatoes, peeled and diced
  • 2 dl white wine
  • 8 dl water
  • 2 stock cubes e.g. meat
  • Salt and piri piri sauce, to taste

Method
  • In a large pan sauté the onions until translucent, then add the tomatoes and wine and simmer for about 5 minutes on a low heat.
  • Add the water, stock cubes, meat, chorizo, carrots and bell peppers and cook for about 25 minutes.
  • When the meat is tender, add the rice and peas and cook until the rice is cooked (it should be fairly wet and moisty).
  • Correct the seasoning and just before serving stir in the piri piri sauce to your liking.
