Arroz à Portuguesa |
Serves 4
Ingredients
- 180 g rice
- 20 cubes of meat (pork or beef), seasoned to taste
- 16 slices of Portuguese chorizo
- 1-2 dl peas
- 2 carrot, thickly sliced
- 1 green bell pepper, thickly diced
- 2 onions, chopped
- 2 ripe tomatoes, peeled and diced
- 2 dl white wine
- 8 dl water
- 2 stock cubes e.g. meat
- Salt and piri piri sauce, to taste
Method
- In a large pan sauté the onions until translucent, then add the tomatoes and wine and simmer for about 5 minutes on a low heat.
- Add the water, stock cubes, meat, chorizo, carrots and bell peppers and cook for about 25 minutes.
- When the meat is tender, add the rice and peas and cook until the rice is cooked (it should be fairly wet and moisty).
- Correct the seasoning and just before serving stir in the piri piri sauce to your liking.
